Carmel Area Wastewater District (CAWD) is the authority having jurisdiction for discharge of grease laden wastewater. The authority of CAWD includes enforcement of grease control requirements for commercial restaurants and food service establishments.

The CAWD Uniform Plumbing Ordinance sets requirements for grease traps in Section 4.3 GREASE INTERCEPTORS.

 CAWD will inspect restaurants for proper grease control measures as necessary, and will issue compliance orders for restaurants that are not in compliance. 

Why is Control of Fats Oils and Grease (FOG) important?

  • Grease builds up in sewers creating "Fatbergs”
  • "Fatbergs" block pipes leading to sewage spills.
  • Sewage spills are a public nuisance and can result in property damage and regulatory fines
Steps to follow if you receive a Compliance Order: hire a plumber, develop plans, submit applications, perform corrective work.
